Fats can be saturated and unsaturated. It depends on the bonds between carbon atoms and its source.
Saturated fat is made from fatty acids in which there are no double bonds between carbon atoms
Unsaturated fat is made from fatty acids in which there is at least one double bond between carbon atoms. Monounsaturated fats have one double bond and polyunsaturated fats have two or more double bonds and they both are liquid at room temperature.
Foods such as cakes, biscuits, sausages and bacon are high in saturated fats.
Foods such as almonds, natural peanut butter, avocados are high in unsaturated fats.
Unsaturated fats are considered better and healthy than saturated fats because saturated fats are more tightly packed therefore they clog arteries. This causes heart attack more easily than unsaturated fat which is loosely packed.
Unsaturated fats have kinks in the hydrocarbon tails thus they cannot pack closely together. This makes them liquid at room temperature. Unsaturated fats lower the LDL which is called as bad cholesterol. Cholesterol is called as waxy substance that block the blood vessels.
Animal fats such as milk fat are high in saturated fatty acids than plant fats. The plant are liquid at room temperature and animal fats are solid.
Therefore, unsaturated fat is healthier as compared to saturated fats which become solid at room temperature and this clog the blood vessels and thus increases risk of heart attack.
